Agni Masala: Regional or Commercial Blends

 

The term may also be used by commercial spice manufacturers or in specific regional cuisines (particularly in Maharashtra) for a pre-made spice mix, often named “Agni” to suggest a bold, fiery heat:

  • Agri Masala: A similar-sounding, distinct blend is Agri Masala (from the Agri community in Maharashtra’s coastal region). This is a very spicy, deep-red masala used extensively in seafood and meat dishes. While not technically “Agni” masala, it certainly ignites a fire!
  • Commercial Brand Name: Some spice companies simply use “Agni Masala” as a trade name for a variety of their strong, general-purpose curry powders, meat masalas, or highly-spiced dry rubs, often in the Kolhapur region of Maharashtra, known for its fiery cuisine. These blends usually contain:
    • Dry Red Chillies (for color and heat)
    • Cumin, Coriander, Black Peppercorns, Cloves, and other standard Garam Masala components.
